Gas Combi Ovens

A gas combi oven is a combination oven fired by gas that can run on dry convection heat, on steam, or on both together. One cabinet can therefore roast, bake, steam, poach and regenerate, which is why it anchors many commercial kitchens.

Gas combi ovens draw far less electrical load, which matters where a site's switchboard or supply is already stretched. Electric models need no gas connection or flue. The decision usually comes down to the services available at the site.

A boiler system generates steam in a separate vessel and feeds it into the chamber, giving steam on demand at a steady rate. An injection system sprays water onto a hot surface inside the chamber, which is simpler and needs less descaling.

Tray capacity is set by peak covers rather than average ones, so work out the busiest service the oven has to carry. Then check floor space, ceiling height and doorways, since a larger combi is taller and heavier as well as wider.
