Commercial Gas Salamander Grills

salamander applies intense radiant heat from above, which makes it the finishing appliance on most cook lines. It's used for melting cheese, glazing sauces, browning gratins and crème brûlée, crisping chicken and fish skin, toasting, and holding plated food at temperature before service. Because the heat comes from overhead, food can be finished in a pan or on a plate without being flipped or moved.

Heat direction. A salamander fires from above onto food sitting on a grid or tray — it browns and finishes without marking. A char grill or barbecue fires from below through grill bars, searing and marking the underside. They do different jobs, and most serious kitchens carry both.

Gas heats up and recovers faster, runs cheaper per hour in most commercial tariffs, and gives higher peak intensity — it's the standard for high-volume kitchens. Electric is easier and cheaper to install because it needs no gasfitter or gas line, and it suits sites with no gas connection, limited ventilation or lower throughput. If you're already running a gas cook line and have canopy capacity, gas is usually the better call.

In almost all commercial installations, yes. Gas salamanders produce substantial radiant heat and combustion products, and commercial kitchen ventilation is designed to AS 1668.2. Your mechanical services contractor will need the appliance's gas input rating to size the canopy and make-up air — we can supply that figure before you order.

Typically only a few minutes to usable finishing temperature, which is the main practical advantage over electric. Infrared ceramic burner models reach working surface temperature fastest. Actual times vary by model and burner type — check the individual product specifications.
