Material is the first decision. Polyethylene boards go through the dishwasher and take colour coding, so they suit raw preparation and high-turnover prep sections. Timber boards are chosen for serving, carving and display, where appearance matters and the board is hand-washed. Size follows bench depth and the task, because a board that overhangs the bench edge shifts under the knife. Thicker boards last longer before the surface scores too deeply to clean well.
