Brew Sage

Hospitality Connect carries nine Brew Sage lines in the Sage colourway: espresso cups, a cappuccino cup, a coffee cup, a mug and matching saucers. It is a cafe coffee service range rather than a full dinner set.

An espresso cup is small and thick-walled so a short shot fills it and holds its temperature. A cappuccino cup is wider and holds more, which leaves room for textured milk over the shot and gives a barista a surface to pour a pattern onto.

Saucers are listed as separate lines from cups, so both are ordered to make a full setting. Check which cup each saucer is made to suit, because a saucer sized for an espresso cup will not hold a cappuccino cup properly when it is carried.

Matching every size to one range gives a consistent look on the table and behind the machine, and it lets staff identify the drink from the cup alone. Mixing ranges works, but replacements then have to be matched by eye rather than reordered by line.

A mug is used for long blacks, filter coffee, tea and hot chocolate, where the customer wants volume and the drink is not built for latte art. Mugs are also the usual choice in staff areas and in aged care and institutional dining.
