Mounting is the first decision. A bench-standing lamp can be moved around a buffet or carvery, while a suspended or bracket-mounted lamp keeps the pass clear underneath. A strip heater covers a longer run of plates than a single lamp, so it suits a kitchen pass where several dishes wait together. Match the heated area to the width of the service surface, since gaps in coverage let plates cool. Bulb-style lamps also light the food, which helps presentation on a buffet, while strip heaters give heat without the glare.
