Sleeve length is usually the first choice. Long sleeves give more protection from splashes and oven heat, while short sleeves run cooler on a hot line and are easier to keep clean at the cuff. Colour is the second decision: white is the traditional kitchen standard and shows a clean uniform in an open kitchen, while black hides marks and suits front-facing service. Fabric weight then decides comfort, since lighter weaves breathe better through summer and heavier weaves last longer through commercial laundering. Chef jacket care and longevity

• Wash separately first cycle: Coloured jackets bleed onto whites in the first wash.
• Don't bleach polycotton: Sodium hypochlorite weakens polyester fibre and yellows whites.
• Cool wash and tumble dry low: High heat shrinks blends and warps button placement.
• Spot-treat blood and oil before laundry: Cold water for blood; degreaser for oil.
• Inspect studs and seams monthly: Replace before they fail mid-service.
