Two choices decide the knife. Blade stiffness comes first: a stiff blade drives through joints and dense connective tissue and suits beef and pork breakdown, while a flexible blade follows the contour of a bone and suits poultry, fish and close trimming. Blade width comes second, with a narrow blade working into tight spaces around bone and a wider blade moving through larger cuts with less drag. Curved blades follow the shape of a bone naturally, while straight blades give more control on flat work. Handle grip matters most in wet conditions.
