DOF stands for double old fashioned, a short, wide tumbler used for spirits served over ice. The width accommodates a large ice cube or sphere, which melts more slowly and dilutes the drink less than smaller cubes.

Most bars run a short tumbler for spirits, a tall glass for highballs and mixers, a shot glass, plus stemware for wine and cocktails. Using a single range across the non-stemmed glasses keeps the back bar consistent.

A narrow column of liquid has less surface exposed to air, so carbonation escapes more slowly and a mixed drink keeps its fizz longer. The height also leaves room for ice above the spirit measure.

Bars usually hold well above peak service requirement because breakage is constant, particularly on shot and short tumbler lines. Buying from an ongoing range rather than a one-off purchase means replacements match what is already behind the bar.

Check the care information on the individual product page before running any new glassware through a commercial glasswasher. Rack glasses so they do not touch, since rim-to-rim contact in the rack is a common cause of chipping.
