Collection: Bonna Luca Salmon

Bonna Luca Salmon is a commercial crockery pattern in a salmon colourway. Hospitality Connect lists four lines from it, made up of round coupe plates and pasta plates for restaurant and cafe service.

A pasta plate is a wide plate with a shallow well, deeper than a flat plate but shallower than a bowl. The well holds a light sauce while the wide rim keeps the presentation open, which suits pasta, risotto and grain dishes.

Four lines cover the plating for a course or two rather than a full service. Venues generally use a small coloured range for selected dishes and run a larger plain range underneath it for everything else on the menu.

Choose plate diameter from the portion, not the other way round. A serving that fills the well of a plate with a clean margin around it reads as generous, while the same portion on an oversized plate looks sparse before it reaches the table.

Coloured plates change how food reads on the pass and on the table. Warm tones such as salmon lift pale dishes that would look flat on white, which is why kitchens keep a second colourway for specific courses rather than replacing white entirely.
