The Stolzle Exquisit collection at Hospitality Connect holds seven glasses: five wine glasses and two champagne glasses. Shapes include Bordeaux and Burgundy bowls for red wine, a white wine glass and a champagne flute.

A Bordeaux glass is tall with a narrower bowl, suited to structured reds such as cabernet and shiraz. A Burgundy glass is wider and rounder, giving lighter reds such as pinot noir more surface area to open up.

Most restaurants run three shapes: one red, one white and one sparkling. Adding Bordeaux and Burgundy as separate red shapes only pays off where the wine list is long enough for guests to notice the difference.

A flute is tall and narrow, so the surface area is small and the bubbles last longer in the glass. Venues serving champagne and sparkling by the glass use flutes to keep the pour looking lively through a course.
