Sieves and sifters are precision tools for baking, straining, and dusting — essential equipment for any pastry kitchen, bakery, café, restaurant, or production environment that needs lump-free flour, aerated dry ingredients, fine-strained sauces, or evenly dusted finishing sugar. Hospitality Connect stocks sieves and sifters in food-safe stainless steel for daily commercial use.

The range includes fine and coarse mesh options for sifting flour and icing sugar, straining stocks and purées, or rinsing grains; conical (chinois) sieves for refined sauce work; rotary sifters for high-volume bakery use; and dredgers for finishing sugars and cocoa. Sizes run from 100mm hand sieves to 350mm bench sieves.

Choosing the Right Sieves & Sifters for Your Business

Sieves and sifters in the commercial kitchen

Straining, sifting, and skimming run across every prep station — stocks, sauces, custards, purées, flour, and fried-food retrieval. The right tool for each task is mesh density, format, and durability, not just whatever's nearest. A torn or rusted sieve fails strain quality and creates a hygiene risk.

Sieves and sifters across the prep station

  • Wire-mesh sieves (chinois, drum sieves, conical): Stocks, sauces, custards — straining particulates for clarity. Mesh density determines what passes through.
  • Tamis / drum sieve: Flat-bottomed mesh on a drum — for purées, pastry creams, and forced-through textures (mashed potato fines, puréed peas).
  • Flour sifters: Mechanical sifters with rotating mesh — flour, icing sugar, cocoa powder. Hand-crank or electric for high-volume bakeries.
  • Colanders and strainers: Larger mesh for pasta, vegetables, and rinsing — not the same job as sifters but often confused.
  • Mesh skimmers: Long-handled wire skimmers for lifting fried food, dumplings, and stocks.

Mesh density and what each is for

  • Coarse (4–6mm): Stock straining — keeps bones and vegetables back, lets liquid through fast.
  • Medium (1–2mm): Standard kitchen sieve — sauces, custards, jus.
  • Fine (0.5–1mm): Refined sauce work — final clarification of consommés and sauces.
  • Very fine (chinois mousseline): Silk-fine straining — high-end pâtisserie and starred-restaurant fine work.

Material selection

  • 18/10 stainless steel: Industry standard — corrosion-free, dishwasher-safe, holds shape.
  • Tinned steel: Cheaper, OK for occasional use, but corrodes faster and not suited for acidic foods.
  • Plastic-rim mesh: Domestic-grade — avoid for commercial use unless you're happy to replace yearly.
