A robatayaki grill is a long, narrow charcoal grill that holds skewers across its rails, so food cooks slowly over the coals in front of the guest. Width is the main sizing decision, because it sets how many skewers run at once and how much counter frontage the grill occupies. Depth matters as well, since a deeper charcoal bed holds heat longer between top-ups. Because the unit burns charcoal, the extraction and make-up air above it need to be settled before the location is fixed.
