Peels — wood vs aluminium
- Wooden peels: Better for launching — semolina-dusted dough slides off cleanly. Wood doesn't conduct heat, so the dough stays cool until it hits the deck.
- Aluminium peels: Better for retrieval and turning — thinner blade edge slides under the cooked pizza without disrupting it.
- Perforated aluminium: Lets excess flour fall through — keeps the oven floor cleaner during high-volume service.
Sizing peels and trays to your oven
Match the peel head to your standard pizza size plus 30–50mm margin. A 300mm pizza needs a 350mm peel head — too small and you'll struggle, too big and it won't manoeuvre inside the oven mouth. For deck and conveyor ovens, check internal width to confirm the peel handle length will reach the back of the deck.
