Boxes are chosen by depth, footprint and whether they stack. Depth sets how far a dough ball can rise before it touches the box above, so a proving box is deeper than a storage tray. A common footprint across the whole set matters more than any single box, because boxes that stack squarely make a stable column in the coolroom and use the shelf height properly. Lids seal the top box in a stack and stop the surface of the dough drying out. Perforated trays suit confectionery and products that need air movement rather than a sealed environment.
