Choosing the Right Dough Boxes for Your Business

Dough box formats

Dough boxes (dough bins, retarder boxes) hold portioned dough during bulk fermentation, retard, and proving. Stackable, vented, and sized to fit standard dough trays and retarder racks, they're essential kit for any pizza, bread, or bakery program running multi-batch dough.

  • Stackable polypropylene (PP) boxes: The pizzeria standard — 600x400mm or 660x460mm footprint, 70–110mm height, vented lids. Stack tall, slide into retarder racks.
  • Lugged dough trays: Italian-style — heavier-walled, designed for direct stacking without lids (the box above forms the seal).
  • Round dough proving baskets (bannetons): Cane or rattan — used for shaped sourdough and artisan loaves at final prove.
  • Bulk fermentation tubs: 10–20L containers for whole-batch fermentation before division.

Sizing for the dough program

  • Single-portion (180g–280g pizza dough balls): 12–16 balls per 600x400mm box at 70mm depth.
  • Bulk dough (5–10kg batches): Single deep tub or two stacked dough boxes.
  • Retarder rack compatibility: 600x400 and 660x460 are the two common Australian rack sizes — confirm yours before buying.

Material care

  • PP boxes are dishwasher-safe: Run through commercial dishwashers daily — they cycle for years without warping.
  • Don't pry frozen lids: PP gets brittle below -10°C — let lids warm slightly before forcing them off.
  • Vent slots clear: Check vents aren't blocked with flour build-up — fermentation needs gas exchange.
  • Cane bannetons: Hand-care only — dust well with flour before each use, brush clean, never dishwasher.
