Sizing your stainless layout
Standard commercial bench depth is 600mm or 700mm — match across the kitchen so undershelves line up. Combi stands must match the exact tray spacing and width of your oven brand; a Rational stand won't fit a Convotherm correctly. Sink bench widths follow the room width: 1200, 1500, 1800, 2100, 2400mm. Order with splashback unless the bench butts a tiled wall.
Material grades and finishes
- 304-grade stainless: The Australian commercial standard. Resists rust under standard kitchen chemicals.
- 316-grade stainless: For coastal venues, dishwash bays and seafood sections — resists chloride pitting.
- Granite-top benches: Simply Stainless dolomite tops for pastry sections where dough rolling needs a cool, hard surface.
- Galvanised undershelves: Cost-effective for back-of-house storage where the visible surface is the top.
