Choosing the right spatula
Spatulas in commercial use cover three distinct tools: turners (fish slices) for flipping food on grills and pans, flexible scrapers for cleaning bowls and folding mixtures, and offset palette knives for cake decoration and plating work. Hospitality Connect stocks Chef Inox across all three categories plus specialty Thermohauser palette knives for pâtisserie. Choose by application — turners need rigidity and heat resistance, scrapers need flex and chemical resistance, palette knives need a thin precise blade.
Material and construction
- Stainless steel turners: rigid, heat-tolerant to 400°C+, ideal for chargrills, plancha, and high-temp pan work. Welded handle preferred over riveted.
- Silicone-headed scrapers: food-grade silicone (rated 230°C+) for stocks, sauces, and folding work where stainless conducts too much heat.
- Polycarbonate scrapers: for cold prep — emulsions, dressings, and bowl scraping where heat tolerance isn't needed.
- Offset palette knives: flexible thin blade in 150, 200, 250, and 300 mm sizes for cake decoration, plating, and lifting delicate items.
- Wooden-handled options: for chefs who prefer the feel of timber on long shifts — beechwood handles need hand-wash care.
Use cases and care
Stainless turners are the kitchen workhorse — burgers, fish fillets, eggs, pancakes all need a rigid stainless slice that won't deform under spatula pressure. The fish slice with slotted blade lets fat drain back to the pan without losing the food on the lift. Silicone scrapers handle sauces, ganache, batter, and stock work — they tolerate high temperatures and don't react with acidic ingredients. Offset palette knives are the patisserie chef's plating tool: thin enough to lift delicate desserts without breaking them, flexible enough to spread ganache evenly, long enough to plate full sheet cakes. Sanitise silicone heads at the end of every shift — fat builds up invisibly in the join between handle and head.
Working with our team
Hospitality Connect's catalogue depth in this category reflects 21+ years of supplying Australian commercial venues — single-supplier convenience across appliances, smallware, and consumables means fewer purchase orders, consolidated freight, and consistent specification advice from a team that's seen most operational scenarios before.
Specification matters more than buyers expect — undersized or oversized purchases waste both capital and operating cost. Our trade team spec'd thousands of fitouts across cafés, restaurants, hotels, function venues, and contract kitchens, and we'll match recommendations to your venue brief rather than push the catalogue.
