A rotary oven bakes a full trolley of trays at once, rotating the rack inside the chamber so every tray sees the same heat. That is the reason bakeries choose it over a deck or convection oven: the bake is even across the load, and one operator can roll a loaded trolley straight in. Capacity is set by the trolley size and the number of trays it holds, so work back from your peak batch. Confirm the fuel type, the door swing and the ceiling height available, because roll-in models need clearance above the trolley.
