A dough rounder takes portions of dough and forms them into even balls, tightening the surface so the dough proves and bakes consistently. A divider rounder does two jobs, cutting a bulk mass of dough into equal portions and rounding each one, which removes the weighing step entirely. The choice between them comes down to volume and consistency: hand rounding is fine for small batches but drifts in weight and tension as staff tire, and it is the variation, not the speed, that shows up in the finished base.
