Char grills are the heaviest grease and smoke producers on a typical cook line. They must sit under a mechanical exhaust canopy designed to AS 1668.2, and your ventilation contractor needs the gas input rating to size the canopy, filtration and make-up air correctly. An undersized canopy over a char grill fails inspection and fills the room.

Brush the bars down with a grill brush between services while the grill is still hot — this is the single habit that keeps the job manageable. Empty and wash the grease tray daily. Radiants and lava rocks need periodic attention: radiants can be brushed and burned off, while lava rocks should be turned regularly and replaced when they're saturated with fat.
