Daub

Daub makes bakery equipment. Hospitality Connect lists seven Daub products, covering dough dividers, dough rounders and bread slicers for bakeries, supermarket bakery sections and venues baking bread in house.

A dough divider cuts a bulk mass of dough into equal portions, so every roll, bun or loaf weighs the same. Consistent portioning matters because uneven pieces bake at different rates and give inconsistent finished product.

A dough rounder takes divided dough pieces and shapes them into uniform balls, tightening the surface so the dough holds gas during proving. It is usually the step straight after dividing on a bun or roll line.

A chamber divider presses a fixed mass of dough into a set number of pockets and cuts it in one action, giving a batch of equal pieces. A continuous divider works from a running stream of dough for higher output.

A commercial bread slicer cuts a whole cooled loaf into even slices in one pass, using a bank of blades set at a fixed thickness. Bakeries and supermarket bakery sections use them to slice to order at the counter.
