- 8cm classic paring: The everyday peeler and trimmer — Wusthof Classic 90mm, Victorinox 8cm, Furi-Pro 9cm.
- 10cm paring (peeling): Slightly longer blade for fruit and vegetable peeling at higher speed.
- Spear-point paring: Pointed tip for fine work — deveining prawns, scoring pastry, releasing citrus segments.
- Wavy/serrated edge: Tomato and stone fruit work — slices through skin without crushing flesh.
- HACCP colour-coded handles: IVO Professional 55000 in green and yellow — visual section segregation for raw protein versus produce.
Material and handle comparison
- German high carbon stainless (Wusthof, Mundial): Holds an edge longer, takes a steel finely. Best for chef's personal kit.
- Swiss stainless (Victorinox): Lighter, easier to sharpen, NSF rated and dishwasher tolerant. Best for line workhorse.
- Japanese steel (Kasumi, Furi): Harder, finer edge — for fine work, but more brittle if abused.
