Gas Boiling Tops

A gas boiling top is a bank of open gas burners with no oven beneath the cooking surface, built for boiling and large-pot work. Burners are rated higher than a domestic hob so a full pot comes to the boil quickly.

A boiling top carries several burners at standard bench height for general pot work. A stockpot burner is a single high-output burner set lower to the floor, so a tall, heavy pot can be reached over and stirred safely.

A bench-mounted boiling top sits on an existing bench or stand and keeps the space beneath open. A cabinet base gives the unit its own stand with enclosed storage underneath, which suits a purpose-built cooking line.

Size follows the number of pots run at once at peak and the diameter of the largest pot, since a wide pot covers more than one burner space. Measure the available run under the canopy before choosing a width.

Open gas burners produce combustion products and steam, so a boiling top is installed under a mechanical exhaust canopy in a commercial kitchen. Confirm canopy coverage and clearances with your installer before choosing a model.
