Choosing the Right Coffee Tampers for Your Business

Why the tamper is the most underrated tool on the bar

A bad tamper costs more in inconsistent shots than the entire purchase price across a six-month period. Channelling, sour shots, and sour-then-bitter inconsistency all trace back to the puck — and the puck traces back to the tamper. Get it right and the espresso program runs more reliably across staff with mixed experience.

Tamper sizing — match the basket exactly

The tamper diameter should match the espresso basket within 0.1–0.3mm. Common sizes used by Australian café equipment:

  • 58mm: Standard for most commercial machines (La Marzocco, Synesso, Slayer, Rancilio, ECM, Profitec, Rocket Espresso, Lelit Bianca).
  • 58.4mm: Tighter fit favoured by competition baristas — minimises channelling on flat-bottom baskets.
  • 53mm: Breville commercial and prosumer machines.
  • 49mm or 51mm: Older La Pavoni and some single-group prosumer setups.

Flat vs convex vs ripple

  • Flat base: The standard, the safest default — produces an even puck for most modern baskets.
  • Convex (curved) base: Slight dome — pushes coffee toward the basket edges, can help on legacy machines or specific blends.
  • Ripple / fluted base: Disrupts the coffee bed before extraction — favoured by some specialty baristas.
  • Self-levelling tampers: Fixed-depth, spring-loaded — reduces operator variation, useful for high-volume cafés with rotating staff.

Tamping technique that protects wrists

Aim for 15–20kg of pressure, vertical, single press. Repeated heavy tamping is the leading cause of barista wrist and forearm injury — switch to a self-levelling tamper or palm-tamp on busy shifts to manage load. Tamping mats and bench-mounted tamping stations also reduce strain by keeping the portafilter at neutral wrist height.
