Look for fast-recovery elements (gas at 28kW+ or electric at 9kW+) — slow recovery between baskets means soggy product. Auto-fill is essential — manual top-up during service slows the line and risks dry-element burnout. Most dedicated pasta cookers also support auto-skim of starch foam to maintain water clarity through service.
Installation and ventilation
- Power: Electric units 15–32A 240V or three-phase; gas needs 20mm/3/4-inch supply.
- Water supply: 15mm cold supply for auto-fill; specify a backflow-prevention device per AU plumbing code.
- Drain: Floor waste below the well outlet; specify a basket strainer for starch sludge.
- Canopy: Type II canopy with steam baffle — pasta cookers throw a lot of vapour.
- Basket count: Stock at least double your peak service basket count — wash one set while the other runs.
