Notes on electric griddles

• Thermostatic zones: Multi-zone plates let you hold different temperatures across one surface.
• Power supply: Countertop units on 15A single-phase; larger plates need three-phase.
• Cleaning: Never use chlorinated cleaners on chrome plates — they pit the plating.
