Collection: Wüsthof Classic Ikon

Classic Ikon at Hospitality Connect covers 42 lines, including cooks knives, bread knives, utility knives, and carving and slicing knives, along with knife sets and knife blocks. The pieces are listed with black handles.

A utility knife sits between a paring knife and a cooks knife in length. It handles medium bench work such as slicing tomatoes, trimming smaller cuts of meat and portioning fruit, where a cooks knife is too large and a paring knife too small.

Choose the longest blade the user can control comfortably on their usual board. Longer blades cover more product per stroke and speed up volume prep, while shorter blades are easier to handle on a crowded bench or a small section.

A carving knife has a long, narrow blade designed to take a single uninterrupted slice off roasted meat. A cooks knife has a wider, curved blade built for chopping and board work, and its width drags when slicing through a large joint.

A knife block gives safe bench storage and keeps a matched set together, which suits a kitchen being fitted out or a small section with a fixed bench position. Kitchens using knife rolls or magnetic rails usually buy individual knives instead.
