A blast chiller rapidly cools hot cooked food, moving it through the temperature range where bacteria multiply fastest far quicker than a standard fridge. Commercial kitchens use one to cook ahead and hold product for later service.

A blast chiller brings cooked food down to refrigeration temperature quickly. A blast freezer keeps going and freezes the product. Combined blast chiller blast freezer cabinets do both, covering cook-chill and cook-freeze in one unit.

Blast chillers are sized by tray capacity, meaning the number of trays the cabinet can bring down in a single cycle. Size to the batch the kitchen produces at peak rather than to a typical trading day.

Nuvo is a model line within the Vision blast chiller range supplied by Hospitality Connect. The Vision collection lists four cabinets, covering both combined blast chiller blast freezer units and upright blast chillers.

An upright blast chiller stands on the floor rather than on a bench, so it suits kitchens with a spare wall run and no free bench space. Measure the available floor width and the door swing before ordering one.
