Turners

A turner is a flat bladed hand tool used to lift, flip and move food on a griddle, grill plate or pan. The blade slides under the food and supports it while it is turned, which is why cooks use one for burgers, eggs and fillets.

A turner has a stiff, usually stainless steel blade set at an angle for flipping food on a hot surface. A spatula has a flexible blade or silicone head and is used for scraping bowls, folding mixtures and spreading. Both are stocked at Hospitality Connect.

A slotted or perforated turner lets fat and oil drain back onto the griddle as food is lifted, which suits fried and grilled items. A solid turner supports the whole portion and stops delicate food folding, so it is used for eggs and fish.

A pizza server is a wide, flat turner used to lift a cut slice of pizza off the tray or board without the toppings sliding off. The broad blade supports the full length of the slice, which a standard turner is too narrow to do.

A wok turner has a curved blade shaped to follow the inside of a wok, so food is scooped and tossed rather than scraped off a flat plane. The long handle keeps the cook's hand clear of the high heat a wok burner produces.
