Types of commercial trolleys
- KD service carts (Cambro BC331/BC340): Knock-down 2 or 3 tier polypropylene carts — clean, light, modular for any back-of-house need.
- Sheet pan racks (Cambro UPR1826): 12 half-size or 18 full-size sheets per rack. Production bakery and combi-oven side runs.
- Fold-and-go carts (Carlisle SBC152, SBC203): Collapse for storage when not in use — events, function and catering work.
- Dome storage and wash trolleys (Aladdin USR/DSR): 1 and 2 bay 5-level trolleys for hospital, aged care and function plate covers.
- Bakery racks (BakerMax GTS-130): Square corner stainless GN racks for bakery production runs.
- Janitorial and bin top utility carts: Carlisle UC194023, JC1945 — for cleaning rounds and bin movement.
What to look for
- Castor quality: Cheap castors fail under load — look for sealed bearing, polyurethane or rubber tread for quiet operation.
- Brake on at least 2 castors: Stops trolleys rolling away on a sloped floor.
- Shelf weight rating: Cambro KD carts handle 250kg total, distributed; Aladdin trolleys are sized for plate cover stacks.
- Material: Polypropylene cleans easily and won't rust; stainless suits high-temperature wash environments.
- Stack-and-store features: Fold-and-go and KD trolleys collapse to free up storage space.
Specifying for your venue
Production kitchens need at least one sheet pan rack per combi oven, plus a KD service cart per prep section. Function venues need fold-and-go trolleys that can be tucked away during normal service and deployed for events. Hospital and aged-care kitchens need dome trolleys sized for ward delivery rounds and matched plate covers.
