SmartMix

A batch freezer churns and freezes a gelato or ice cream mix one batch at a time until it reaches serving consistency. It is the production machine behind the display cabinet, not a storage freezer.

Automatic extraction means the finished batch is pushed out of the freezing cylinder by the machine rather than scraped out by hand. It reduces handling between cycles and keeps production moving during a shift.

A horizontal batch freezer has its freezing cylinder mounted on its side, with the batch discharged from the front. Gelato producers choose the layout for the way it empties and the working height it sits at.

Work from litres per cycle and the number of cycles achievable in a production shift, then check that against your busiest trading week rather than an average one, so the machine is not the bottleneck in summer.
