A pizza board carries the cooked pie from oven to table. The choice between wood, aluminium, slate, and melamine comes down to presentation goals, durability, and how often the boards cycle through service.

  • Wooden boards (acacia, mango, oak): Classic woodfire-pizzeria look. Doubles as serve-and-share centrepiece for sharing pies. Hand-care required.
  • Aluminium / steel pans: Speed and durability — pizza arrives still on the cooking pan, no transfer step. Common for thick-crust styles and Detroit pizza.
  • Slate boards: Modern aesthetic, heavy and stable on the table. Care needed — slate chips if dropped.
  • Melamine boards: Lighter and lower cost, dishwasher-safe. The workhorse for high-volume café and casual venues.
  • Round vs rectangular: Round for traditional pies; rectangular for Roman al taglio, Detroit, and shared-platter formats.

Sizing — match the pie plus margin

A 300mm pizza needs at least a 350mm board so the customer has room to slice without crusts overhanging. Standard sizes:

  • 250–300mm: Personal pizzas and mini pies.
  • 330–400mm: Standard 12" and 14" pizzas.
  • 400–500mm: Large family pies and shared platter formats.
  • Long rectangular (450 x 250mm+): Roman al taglio and Detroit-style trays.

Care for wooden boards

  • Hand-wash only: Dishwasher heat splits and warps wood — wash by hand and dry on edge.
  • Oil monthly: Food-grade mineral oil keeps the surface sealed against moisture.
  • Never serve straight from pizza oven: Place pizza on the board only after a brief rest — direct 400°C base scars the wood.
  • Sand and re-oil if scarred: Light sanding restores the surface for years of additional service.
