Collection: Meat Tenderiser

A meat tenderiser breaks down the fibres in a cut so it cooks more evenly and eats more tenderly. Hand tenderisers are mallets or bladed hand tools, while machine tenderisers pass the meat between rollers fitted with blades.

A manual tenderiser is a mallet or hand-held bladed tool worked by the operator, which suits low volumes and small kitchens. An electric machine feeds the cut through powered rollers, which is faster for repeat portioning.

Hospitality Connect lists 13 products in this collection. Most are hand tenderisers and kitchen utensils, with a smaller number of meat mincers, meat mixers and meat and vegetable slicers alongside them.

The meat tenderiser collection at Hospitality Connect includes Sirman, Wiltshire and Chef Inox lines among others. Between them they cover hand tenderisers, kitchen utensils and machine-based meat preparation equipment.

Meat tenderisers touch raw meat, so they need washing and sanitising after each use rather than at the end of service. Bladed and rollered designs should be stripped as far as the design allows, so residue cannot sit in the mechanism.
