A gastronorm pan is a stainless steel food pan built to a standard sizing system used across commercial kitchens. Because the sizes are standardised, the same pan fits bain maries, prep fridges, ovens and serveries built to that same standard.

Choose depth by volume and turnover. A shallow pan holds less but heats, chills and empties faster, which suits fast-moving items. A deeper pan holds more product for volume service but takes longer to reach temperature all the way through.

An insert is a pan or tray that sits inside a larger gastronorm opening or pan, dividing the space or lifting product clear of liquid. Grill inserts sit in the base of a pan so food drains rather than sitting in its own juices.

Lids are needed for covered storage, transport and holding, where they slow moisture loss and keep product covered between services. Flat lids also let pans be stacked in a cool room without one pan sitting directly on the food below.

The Maxipan range at Hospitality Connect includes stackable pan designs, which nest into each other when empty. Stackable pans reduce the shelf space needed to store spare pans in a cool room or dry store between services.
