For event catering serving 100-200 covers, plan 4-6 hot carriers and 2 cold carriers. Heated carriers add 240V power draw (50-150W) but maintain 65 degrees C+ for 6+ hours; passive carriers maintain plus or minus 5 degrees C from start temp for 4-6 hours. Match the carrier to the menu - soups need top-loaders; mains need front-loaders.
