Collection: Duck Ovens

A commercial duck oven is a specialist roasting oven built to hang whole ducks vertically over heat, so fat renders and drains away while the skin crisps. It is used in Chinese barbecue kitchens and roast meat shops.

Two. The duck oven collection at Hospitality Connect is a small, specialist range rather than a broad category, covering one duck oven from FED and one from K+ rather than a full selection of models.

Hanging a duck lets hot air circulate on every side at once and lets rendered fat run off rather than pool under the bird. That is what produces the even colour and crisp skin associated with Chinese roast duck.

Chinese barbecue shops, Asian restaurants, roast meat counters and food halls use duck ovens to roast whole birds in volume. Hospitality Connect supplies them Australia-wide from Penrith, New South Wales, with trade pricing.

A duck oven is a hanging roast oven, so it also suits pork belly, char siu and whole chickens that are hooked and roasted vertically. Anything cooked flat on a tray is better suited to a conventional or combi oven.
