Capacity is the first decision: counter kettles cover 23 to 76 litres, while tri-leg and pedestal kettles run from 76 to 379 litres. A tilting kettle pivots so the contents pour out over the rim, which suits batch cooking; a stationary kettle stays fixed and is emptied in place. Tri-leg mounting leaves the floor clear underneath, and a pedestal gives one central base. Mixer kettles add a built-in agitator for thick products. Twin models let a kitchen run two batches at once.
