Commercial dishwasher bench-and-rack layouts integrate the inlet, machine and outlet bench into one prefabricated dishwash zone. Types and configurations
- Inlet (dirty) benches: 1200–1800mm length with rear upstand, rack rails and integrated trough for pre-rinse spray.
- Outlet (clean) benches: Pitched top and rack rails for drainage; usually 1200–1500mm.
- Dishwasher rack bays (BRK-DW-C): Stand-alone bays for storing 500x500mm dish racks vertically.
- Glass rack bays (BRK-C): Same footprint configured for shorter glass racks; freestanding for bar and beverage zones.
- Pre-rinse and pot-filler towers: T-3M53 series single and dual hob units with optional pot fillers — the spray-down step before the machine.
Sizing for the wash zone
A standard undercounter setup needs 600mm inlet bench + 500mm machine + 1200mm outlet — plan a minimum 2400mm wash run. Pass-through hood layouts step up to 3000–3600mm including dirty and clean benches. Confirm rack format (400mm or 500mm square) before ordering benches; rack rails and trough widths are sized to suit. Rack bays sit alongside or behind the wash run — 500W x 500D bays stack 8–10 racks vertically in 800mm of height.
Plumbing and floor planning
- Trough drain: Dirty bench trough needs a 50mm waste outlet to floor waste, ideally with a basket strainer.
- Hot water: Pre-rinse units need a 15mm hot supply at 55°C; tee from the dishwasher feed where possible.
- Bench falls: Outlet benches must drain back into the machine's pumped exit — pitch the top 5–8mm/m.
- Splashback height: Run a 600mm tall splashback behind the inlet bench — pre-rinse spray is aggressive.
Plan the wash zone in three lanes: dirty bench (600–1200mm with rear-wall trough and pre-rinse spray), machine (500–1200mm), clean bench (1200–1800mm with sloped drainage). Add separate rack storage adjacent to the wash zone — wet racks need vertical air-dry and shouldn't return to the dirty side. Most venues underestimate clean bench length and end up with stack-overflow into walking aisles; budget 20–30% extra for peak service buffer. Confirm floor falls and floor-waste positions before fitout — concrete falls are expensive to redo. Council note: most local councils require a grease arrestor downstream of the dishwasher and pre-rinse waste line; check requirements before fitout to avoid expensive rework. Allow space for the grease arrestor in the floor plan and budget separately for plumbing connection and council approval.
