Choosing the Right Tin Bakeware for Your Business

Choosing commercial bakeware

Commercial bakeware is built for daily oven cycling, sheet-pan racks, and dishwasher abuse — the duty cycle that destroys domestic tins within a year. Look for warp-resistant gauges, beaded rims for safe handling, and dimensions that match your oven trays and racks.

Materials and finishes

  • Aluminium (uncoated): Excellent heat conduction, even browning, lightweight. Reactive with acidic batters over time — fine for breads and most cakes, not ideal for citrus or tomato bakes.
  • Anodised aluminium: Hard non-reactive surface, longer life than uncoated, won't pit from acidic ingredients. The standard for production patisseries.
  • Aluminised steel (alusteel): Steel core with aluminium coating — robust, takes deep impact, good for sheet pans seeing heavy daily use.
  • Stainless steel: Indestructible but slow to brown — better for moulds, ring forms, and dough work than for direct baking.
  • Non-stick coatings: Useful for delicate releases (madeleines, financiers) but coatings degrade with metal utensils and time. Treat as a 12–18 month consumable.

Sheet pan sizes — what fits where

  • Full sheet (660 x 460mm): Standard for most Australian commercial ovens — fits combi oven roll-in racks and bakery trolleys.
  • Half sheet (450 x 320mm): Smaller convection ovens, deck ovens, and patisserie applications.
  • Quarter sheet (240 x 320mm): Test bakes, small-batch finishing, café back-of-house.
  • GN 1/1 (530 x 325mm): Combi-oven and gastronorm-compatible — interchangeable with other GN equipment.

Bakeware care and longevity

  • Don't use metal utensils on non-stick: Spatulas and palette knives scar non-stick coatings — use silicone or wooden tools.
  • Wash uncoated aluminium by hand: Detergent reactions can darken raw aluminium — light hand-wash and air-dry preserves finish.
  • Don't shock cold water onto hot tins: Thermal shock warps tins and ruins planarity — let tins cool before washing.
