Mashers and tenderisers — different jobs

Mashers and tenderisers cover two distinct prep tasks. Mashers crush cooked vegetables (potato, swede, parsnip, root mash) and dense proteins for service. Tenderisers either physically break down muscle fibres in raw meat (Jaccard-style needle blades, cubing tenderisers, mallet pounders) or chemically marinate to tenderise.

Masher formats

  • Hand mashers (potato mashers): Stainless head with grid or wire patterns — bench-side mashing of small batches.
  • Industrial bowl mashers: Long-handled, heavy-duty heads for floor-standing pots and bain marie batches.
  • Ricers and food mills: Press cooked potato through a fine plate for the smoothest mash texture.
  • Stick blender mashing: Faster but produces a gluier texture if overworked.

Tenderiser formats

  • Mallet tenderisers (steel, two-sided): Smooth side for flattening, spiked side for breaking surface fibres. Standard for schnitzel and chicken paillard.
  • Needle / Jaccard blade tenderisers: Push-through blade arrays that puncture muscle fibre without crushing — used for steaks and roasts.
  • Cubing / cube steak machines: Bench-mounted manual or electric units that pass meat through cubing rollers.
