Global Cooks Knives

A cooks knife, also called a chef's knife, is the general-purpose kitchen blade used for chopping, slicing and portioning. Global makes cooks knives in several blade shapes, and Hospitality Connect supplies the range to Australian venues.

A standard cooks knife has a curved edge that suits a rocking cut through herbs and vegetables. An oriental blade is flatter along the edge, which suits a push cut with a straight down-and-forward motion and flat contact with the board.

A fluted blade has shallow hollows along the face that break the suction between the steel and wet food. It stops slices sticking to the knife, which makes it useful for potato, cheese, cured meat and other moist ingredients.

MinoSharp is the sharpening system sold alongside Global knives. A multi-stage sharpener works the edge through progressively finer stages, letting a kitchen keep knives usable between full sharpenings rather than sending them out.

Sharpen when a knife starts to crush rather than cut, and hone the edge far more frequently than you sharpen it. A kitchen doing heavy prep needs attention much more often than one where the knife is only used through service.
