Furi Pro Stone Block Sets

A Furi Pro Stone block set pairs Furi Pro kitchen knives with a knife block from the Pro Stone series. Hospitality Connect lists nine of these sets, in colourways including Snow, Midnight and Sepia.

The three that do most of the work are a cook's knife for general board work, a paring or utility knife for detail, and a serrated knife for bread and soft-skinned produce. Additional blades in a set are useful but used far less often.

A knife block suits a chef's own station, a demonstration kitchen or a front-of-house open kitchen where the knives are on display. Large production kitchens more often use magnetic strips or knife rolls, because a block takes up working bench space.

Knives should be washed and dried by hand and returned to the block dry, since trapped moisture damages both the blade and the block. Edges are kept in shape with regular honing and sharpened properly when honing stops restoring the cut.

Colour matters where the block is visible to customers, such as an open kitchen, a cooking school or a display bench. In a back-of-house kitchen the practical considerations are the footprint on the bench and how easily the block can be wiped down.
