Commercial meat mixers, mincers and tenderisers are heavy-duty machines for butcher shops, delicatessens, sausage makers and high-volume restaurants producing burger patties, sausages, meatloaf and tenderised cuts in-house.   • Floor-standing mincers: 415V three-phase units with auger feed for high-volume butcher production.
  • Meat tenderisers (mechanical): Roller-blade tenderisers for breaking connective tissue in steaks and schnitzels.
  • Meat mixers (paddle-type): 50-200L bowl mixers for blending mince, sausage filling and burger mix with seasonings, fats and binders.
  • Combination mincer-mixers: Twin-function units for small-batch operations.

Sizing throughput

Match the machine to your daily mince and patty production. A small café making 30 burger patties a day runs a #12 bench-top mincer (10kg/hr practical). A butcher shop making 50kg of sausage and burger mince daily runs a #22 (50kg/hr). A high-volume operation supplying multiple sites needs #32 floor-standing or larger. For tenderisers, throughput is per blade pass: a single-pass roller tenderises 4-6 schnitzels per minute. Match the equipment to peak demand plus 30% headroom.

Operating notes and safety

  • Pusher (stomper) safety: Never push mince with a hand - always the supplied pusher. Hand-feed accidents are the #1 cause of butcher injuries.
  • Plate and knife rotation: Mincer plates and knives wear together as a matched set. Replace as a pair, not one at a time.
  • Strip-down clean: Daily strip-down is HACCP-required; bones and sinew jam in the auger overnight and corrode the head.
  • Power supply: Most #22 and larger machines need 415V three-phase or 15A 240V; confirm before delivery.
  • Sharpening cycle: Mincer plate sharpening every 2-3 months for daily use; tenderiser blades replaced annually.

Specifier checklist: confirm raw-material flow (bone-in vs bone-out feed; some mincers tolerate small bone, most don't); plan for cold-room placement (mince at warmer than 4 degrees C drops shelf life by half); coordinate with butcher's WorkCover induction (mincer use is a registered hazardous task in AU). Stock spare plates (3mm, 5mm, 8mm), knives and a complete head replacement as critical-path consumables - downtime in the butcher block costs revenue per hour. Mince temperature is critical to product quality - keep raw materials below 4 degrees C through processing or fat smears and the resulting product turns greasy. For burger production, a chilled bowl mixer with paddle attachment delivers more consistent texture than a stand mixer with paddle.
