Why filter fryer oil

Filtering used fryer oil daily extends oil life by 50–100%, improves food flavour and colour, and protects the fryer's heating elements from carbon build-up. For any venue running more than 5kg of fryer oil per service, a portable oil filter pays for itself within weeks on oil savings alone.

Portable vs built-in filters

  • Portable / mobile oil filters: Wheel between fryers, drain into the filter, pump filtered oil back. Suits multi-fryer kitchens and venues with several oil types kept separate (chicken / fish / chips).
  • Built-in fryer filtration: Integrated systems on premium fryers — push-button filter cycle, no transfer of hot oil. Higher upfront cost but reduced labour and lower spill risk.
  • Manual filter cones and crocks: Bench-top funnel and cone filter setups — slow but cheap; suitable for low-volume operations.

Operational notes for safer filtering

  • Cool slightly before filtering: Most filters are rated for hot oil but allowing 10–20 minutes off heat reduces splash risk and extends pump seal life.
  • Filter at end of service, not mid-shift: Fryers should be cool enough to handle and oil level low enough to drain without overflow.
  • Replace filter media regularly: Pads or paper filters are consumables — running them too long bypasses filtration and damages the pump.
  • PPE matters: Heat-resistant gloves and apron when handling hot oil. A 180°C oil splash will cause serious injury.
